Beef Ribs Barbecue
On my second visit at Gensan HIGH CUBE FOOD DISTRICT. As hunger crept in and was looking for meat (barbeque). I ran off to this stall called "CAVEMAN" perfect and ideal for my cravings.
The owner, Sir Earl then offered me their "best seller", they call it SUPER BEEF RIBS MEAL weighing 200g just as perfect serving size for a real carnivore like me.
After ordering, they quickly prepared it, serving first my rice with toasted garlic on top and letting it sit for quite some time until they served their prized beef after 10mins or so... My rice then quickly cooled down (😅👎) waiting for the meat to be grilled and reheated.
Finally! When they served it. Verdict comes in! 😈😋😜 itadakemasu!
The dish has a surprisingly complex intoxicating fragrance.
The meat is:
Super Tender - the bone attached to it easily fell off the counter just before they placed it on to my wooden plate and on top of that my fork easily slides into the meat like it's tenderness resembled to the tenderness of coagulated collagen. Beef were also smooth to your lips and gentle to your tongue.

- With a Strong Beefy essence that was perfectly well preserved. With this such cut of meat really tells its high and sumptuous rich umami.
Their Sauce is:
- If not mistaken it's a Worcestershire Sauce base (70-80% potency)
- Mildly sweet with a strong bite of spiciness overtones the sauce at first I thought it was from chili peppers but it wasn't as I've asked the owner/cook Sir Earl and told me it's from "peppercorns". Hmmmmmm 🙄°°°
- With a subtle hint of saltiness.
- This sauce is well thought of and precisely constructed --- giving balance to complete the harmonious flavors they both consists. Splendid! 😋👍
Side Dish: Atchara (pickled veges and fruits)
The Atchara is perfectly seasoned. The acidy is just right with an amazing crispness. It also helps to wash out the violent flavors of the main dish, perfect to end the meal!!!
Note:
The whole beef and sauce idea --- referring to it's flavor and aroma. It's sense of flavor profile lasts even if the meal was already consumed. Such a terrific aftersense! This was my first time having such feeling in eating a meal. Truly, truly superb!
Can't explain how does that simple yet undeniably delicious meal creates this feeling of "aftersense".
...or maybe because it was beef and that it is composed of heavier scent which lingers overtime than that of chicken and pork having little less fragrance. 🤓

Disclaimer:
The Atchara is way too small by portion just a tablespoon to make it more precise. I think this should have been doubled or tripled as a complimentary to their diners as well.
The wax paper as underliner wasn't steady. Whenever you pull off your meat and sliced through, the entire meal may as well glides. What a terrible plating idea!
PS
SUPER BEEF RIBS MEAL (PHP 189 + P15 for a bottle of juice 250ml "if desired"). If you are in desperate hunger for good food and flavors. Giving enough respect to the cook has made an excellent touch to this type of meat dish. But, in my personal point of view this was too overpriced.
Overall! I would highly recommend eating this dish especially for those that loves bbq and beef.

This is what I get from my first day of experience with CAVEMAN.
Later on, few months after...
In FOOD TRIP Plaza we dined, together with a companion. I introduced her to this delicious barbeque I once had tasted before, so she ordered PORK - BABY BACK RIBS MEAL Ph99. And me? I ordered differently from its nearby stall called SU-TO-KIL. I ordered their solo meal for Sugba (Barbequed Pork Baby Back Ribs) - Tola (Mangrove Clams/Kinason/Imbao Soup) - Kilaw (Malasugi cubes marinated in vinegar with onions, gingers and chilies) menu, Ph 200.
The Caveman's Baby Back Ribs remained consistent with their melt in your mouth and succulent tender meats, but this piece of meat comes with an aggressive amount of fats, 1/4 of its original size were fats. Though it was also tender, it is for those health conscious to avoid such large piece of fat layers. And it's flavors? Well, it's porky -- very well rounded, and seasoned generously with their signature sauce drizzled over the meat were also consistent, though not that intensely spicy like before, but still this has pleasing and appetizing flavor combinations which were given and heightened by the use of the sauce and the porky flavors. Delicious and worthy to be eaten.
Hence, I like the Baby Back Ribs from Su-To-Kil even better. Though their meat was thoroughly cooked and slighty dry but still leaves a medium chewy textures. But what makes this dish truly overwhelming than that of Caveman's was its perfectly cooked meat with a robust amount of smoky flavor, very addictive! Although their sauce was sweet enough, it is still incomparable if you paired the meaty-smoky ribs + the sweet sauce were just so amazing!
